While I haven’t done a formal, professional olive oil tasting, I am an avid home cook who regularly sources high-quality extra virgin olive oils. I know how to distinguish premium, single-origin oils from mass-market ones based on their aroma, peppery finish, and clarity.

What criteria do you consider when evaluating olive oil quality?
When evaluating high-quality olive oil, I look for three key things:Fruitiness: A fresh, vibrant aroma of green olives, grass, or herbs.Bitterness & Pungency: A pleasant sharpness on the tongue and a peppery kick at the back of the throat, which indicates high-quality antioxidants.Mouthfeel: It should feel clean and crisp, not heavy or greasy.
